Here are some popular sights and attractions you may want to check out if you choose not to do a shore excursion and explore Maui on your own:

 
Road to Hana: The Road to Hana is a harrowing road carved into the rain forest with 50 one lane bridges This is not for the faint of heart! Along the trek you will see some beautiful waterfalls, lava cliffs, and sandy beaches. 
 
Haleakala National Park: Haleakala National Park is home to volcano,Haleakala Crater's, moon-like landscape. You’ll venture two-hours from sea level to the summit at 10,023 feet and pass multitudes of ecosystems along the way. See the endangered silversword plant at 9,000 feet before you stop in to the Visitors Center, which opens from sunrise to 3:30 p.m. In addition, check out exhibits about the native flora and fauna of the volcano. Most people stop at Puu Ulaula Overlook, the volcano's summit, to watch the sunrise. 
 
Snorkeling: Maui is a snorkel paradise with no shortage of excellent locations for all ability levels. Try Black Rock, at Kaanapali Beach, where it's not uncommon to run into a sea turtle. Plus, fish huddle along the lava/coral wall below Black Rock itself. Honolua Bay doesn’t have a sand beach, but snorkelers enter the water from huge, smooth rocks to see the coral formations on either side of the bay. Three miles offshore you’ll find Molokini Crater, a Marine Life Conservation District that boasts clear water with visibility of more than 100 feet. There is an excellent chance of seeing  monk seals, thousands of tropical fish, manta rays, and whale sharks at Molokini Crater. 
 
Luau: Every visitor to Maui should attend at least one luau! Polynesian dancers in beautiful costumes, beachfront locations, authentic island cuisine, and open bars make luaus the cultural trademark of the Hawaiian Islands. Plus, they are a ton of fun! Drums of the Pacific Luau features an exotic fire-dancer.
