Peruvian cuisine has always been wonderful, but is now receiving world wide attention thanks to the efforts of Chef Gaston Acurio. With hundreds of different types fish and shellfish in nearby waters, perhaps the fact that Peruvians create delicious ceviche should be no big surprise. The cultural influences are just as remarkable, with dishes such as criollo (Spanish, African, Andean, and Chinese), chifa (Peruvian and Chinese), and roasted guinea pig (ancient Andean)! Coastal cuisine includes plantains and seafood, and more inland you'll find a variety of meat, potatoes, and corn. Known for cuisine both distinctive and unique, Peruvians have certainly earned the right to global attention! Enjoy!
